Courgette Medley

This Vegetable haven is bursting with an array of flavours, textures, spices and plant-based nutritional goodness. If you have these 5 basic ingredients you are set. Courgette/ Zucchini, potatoes, red pepper, Broccoli & Mushrooms. But remember you can always get creative and use whatever vegetables you prefer, as long as they have a similar cooking time.

Ingredients

 

 

 

  • 4-5 potatoes

  • 2 courgettes
  • 1 red pepper
  • 3-4 cloves of garlic
  • some broccoli
  • 8 tomatoes (Medium/large)
  • 3 garlic gloves
  • 1 green onion/ spring onion
  • -Seasonings-
  • Curry powder
  • Ground Cumin
  • All Purpose Seasoning
  • Mixed herbs

Step 1: Get all your ingredients at hand and ready, before setting some water to boil for your potatoes.

Step 2: Next wash and slice your potatoes, then put them in to boil for 15 minutes on medium heat.

Step 3: Grab your mushrooms slice them up and throw your seasonings on them. I used:

  • Curry powder
  • Ground Cumin
  • All Purpose Seasoning

Step 4: Now that you’ve sliced and seasoned your mushrooms, set them aside and chop up your tomatoes, spring onion and garlic for later use.

Step 5: Go ahead and check your potatoes they may be ready. If so turn off the fire.

Step 6: Now you want to cut up your courgette and broccoli and set aside for use later.

Step 7: Next, start up a medium/hot flame and throw your chopped tomatoes, spring onion and garlic in.

Step 8: Let it cook and simmer for 5-10 minutes while stirring continually. Once ready throw in your mushrooms and mix them in to gain maximum flavour conversion. Lastly throw in your already cooked potatoes and let everything sit and soak in the juices and flavours.

Step 9: Now that your mushrooms and potatoes have merged into the medley and been infused with prior flavours, throw in your courgette and broccoli & mix well.

Step 10: Add a dash of mixed herbs, curry powder, garlic granules, smoked paprika, fresh coriander & spinach, to finish off the medley!
